Thai Seafood Sauce


Ingredients:

  • 6-8 Thai chili peppers, minced
  • 2-3 cloves garlic, minced
  • ½ tsp sugar
  • 2 tbs Thai fish sauce
  • 2 scallions, minced
  • Juice of 2-3 limes (3-4 tbs)

Combine all ingredients. Taste and adjust seasonings as needed. Some limes are very tart and require additional sugar. However, add sugar very carefully, as fixing a sauce that is too sweet is very difficult.

Use this sauce for dipping boiled or steamed crab, lobster, shrimp, clams, or mussels. This sauce is very hot and comes courtesy of my mother-in-law.
