Sausage Balls


Ingredients:

  • 1 lb bulk hot sausage
  • 3 C Bisquick
  • 1 lb sharp cheddar cheese, grated

Combine ingredients and knead until well mixed. Shape into 1-inch balls and place on a cookie sheet. You may need to add some beef stock to make the mixture stick together. Place in 375 degree preheated oven and bake for 25 minutes. You can substitute other cheeses for cheddar, like marble jack or pepper jack, both of which have a very nice flavor.

Be aware that the balls will render during the cooking process, and the oil will accumulate in the pan. Also, these tend to stick to the sheet as they cook, which is what gives them a lovely crunchy bottom. However, it makes them difficult to get off the sheet sometimes. My advice is don't line your sheet pans with aluminum foil, as this will make it very difficult to remove. It would be best to use a non-stick sheet pan for baking these, although a regular sheet pan with a non-stick spray would also work.
