Michael's Recipes/Salads: Potato Salad

Potato Salad


Ingredients:

  • 15-18 medium potatoes
  • 2½ C mayonnaise or salad dressing
  • 4-6 hard boiled eggs
  • 2 tbs sweet relish
  • 1 tsp dijon mustard
  • 1 tsp prepared mustard
  • 1 tsp sweet hot mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp Louisiana hot sauce
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp balsamic vinegar
  • 1 tsp red wine vinegar

Wash potatoes and boil them for about 25-30 minutes or until soft. Drain the boiling water and rinse the potatoes under cold running water to stop the cooking process. Peel the potatoes and set them aside, under refrigeration, if possible. This will make the potatoes easier to mix and less likely to crumble.

Combine all the remaining ingredients except the relish and eggs and mix thoroughly. Pour the mixture and the eggs and relish over the potatoes and mix slowly and completely. Refrigerate for at least 4 hours before serving.
