Creole Tomato Sauce


Ingredients:

  • 2 tbs oil
  • 4 oz onions, small dice
  • 4 oz celery, small dice
  • 2 oz green bell pepper, small dice
  • 2 cloves garlic, minced
  • 1 qt Tomato sauce
  • 1 bay leaf
  • pinch dried thyme leaves
  • Creole seasoning to taste

Sautee the vegetables in the oil until the onions are translucent. Add the tomato sauce, bay leaf, thyme, and Creole seasoning and bring to a boil. Reduce heat immediately and simmer for 15 minutes. Remove the bay leaf and adjust the seasonings.
