Black-eyed Pea Salad


Ingredients:

  • 1½ C cooked or canned black-eyed peas
  • ¾ C bell pepper, chopped
  • ½ C celery, chopped
  • ½ C red onion, chopped
  • ¼ C onion, chopped
  • ¼ C vegetable oil
  • ¼ C sugar
  • 2 tbs cider vinegar
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ black pepper
  • ½ tsp hot sauce

In a large bowl, combine the peas, peppers, and onions. Combine oil, sugar vinegar, salt, pepper, hot sauce, and garlic and add to the peas. Toss to coat completely and chill for at least 2 hours for the flavors to combine.
