Michael's Recipes/Entrees/Seafood: Bearnaise Sauce

Avocado Dressing


Ingredients:

  • 2 avocados, halved and pitted
  • 1 C mayonnaise
  • 2 serranos chiles, seeded
  • ½ onion, minced
  • 1 clove garlic, minced
  • 2 tbs honey
  • 2 tbs Worcestershire sauce
  • 1 tsp sea salt
  • Juice of 5 lemons
  • pinch cayenne pepper

    In a large bowl mash the avocados with the lemon juice. Combine the avocado and the remaining ingredients in a blender and blend until smooth. Pour the dressing into an airtight container and refrigerate overnight. Makes 2 cups.
